Inspiration

The main chef of our team is Carlos Reyes III, he is in charge of everything that takes place in the cook-off. He brought this amazing team together, and we have all become a large family.
Here is his story...

It all got started about 2-3 years ago when Carlos and his father went to help cut tree branches at a friend's house. It was a pecan tree, and his father decided to keep the wood. He cooked his 1st brisket with the pecan tree wood,, and soon after he started cooking more and more brisket. He began to keep track of the ingredients, temperature, and cooking time he used on an excel spread sheet. Needless to say, his brisket was beginning to coming out better and better. After a few years, Carlos started talking to his father about entering his recipe into a cook off. He never agreed to the idea, but was later convinced to enter the Mosquito Festival in July 2009. The agreement was that Carlos would be in charge of getting everything together, and that his father would just cook his brisket and be done. After the agreement was settled, they had to come up with a team name. After a long time of picking and choosing they finally picked "La Familia", which means "The Family" in spanish. They competed with this team name but later changed it to "Team Jessica", to remember a cousin that had recently passed away. Now, with the official team put together, they are named C-Los. Now Carlos Jr.III is now in charge of the team and is very dedicated.
